Director of Catering

Work closely with Clubhouse Manager, Director of Restaurants and Banquet Manager. Possess outstanding culinary, preparation and presentation skills. Ensures team maximizes revenue opportunities by up selling and accurately forecasting all events. Strong selling skills and understanding of sales processes. Effectively sell products and services. Perform menu building and costing. Have excellent interpersonal skills and the ability to communicate with staff to meet all daily objectives. Have excellent organizational and creativity skills in implementing systems, which will allow the catering department to run efficiently. Undertake special projects as directed by the Clubhouse Manager and/or General Manager. Attend weekly F&B meetings and staff meetings; conduct pre-function briefings. Develop effective ways of promoting and marketing banquet and special event functions.
