DIRECTOR OF BAKERY EATZI'S -  DALLAS

eatZi's is an innovative retail concept - not a supermarket and not a restaurant - rather something right in-between. Each market features an exhibition bakery and kitchen, a caf?, rotisserie grille, made-to-order salad and sandwich stations, an excellent wine selection, and a broad assortment of hard-to-find specialty foods sourced from around the world. Our world-class bakery features an artisan line of over 20 breads and baguettes baked fresh daily and over 35 varieties of made-from-scratch cakes, tarts, pies, and cookies. eatZi's is beginning the search for a Director of Bakery in our support  center in Carollton, Texas. This individual will provide direction and oversight regarding R&D, production, merchandising and marketing of bakery/pastry items for 5 markets in Dallas, Houston, Atlanta and Rockville, Maryland.

 

You will be responsible for:

Researching and developing new bread and pastry items to be prepared and served to GUESTS

Standardizing recipes and ensuring aderence in markets

Developing production schedules for bread/pastry items

Enforcing sanitation and safety standards within markets

Developing merchandising and pricing standards for bakery items

Training head bakers and production staff in markets

 



Qualified candidates will have:

7+ years of scratch bakery and pastry production/management experience in a restaurant, hospitality or hotel environment

Strong working knowledge of pre-ferments, hydration, bakers percents and other aspects of artisan baking

Strong communication skills

Previous supervisory experience and the ability to train, develop and lead a team of 20+ employees

Proven record of success in a performance-based environment

Pro active, energetic self starter with the ability to work in a fast paced environment

Culinary or Baking degree preferred
