The Probation Department is seeking a Food Service Manager to plan, direct and manage the institutional food services? programs for the Department?s Juvenile Halls and treatment facilities. Successful candidates? names will remain on the eligible list for six months.

 

Essential functions of this position are to:

?  Establish and implement procedures for the food service program in conformance with County policies, State, and Federal standards and supplemental food subsidy programs.

?  Select, evaluate and supervise food service staff through subordinates; ensure that staff are trained in correct food safety practices and sanitation procedures.

?  Prepare food service program budget and monitors expenditures; prepare and maintain a variety of records and reports.

?  Develop specifications and requisitions for purchasing of food supplies and equipment; review bids, monitor and maintain inventory; coordinate deliveries.

?  Act as departmental liaison on all matters pertaining to the food service program; attend meetings and conferences.

?  Advise food service institutions on equipment requirements, kitchen design and state institution standards for repairs and sanitation; evaluate and recommend product or procedural changes. Plan menus and direct staff in preparation of food; ensure that meals are nutritious and dietarily balanced.

 

?  Inspect food preparation and serving areas; ensure high standards of safety and sanitation.

 

THE REQUIREMENTS

 

Three years of full time supervisory or management experience in an institution or large residential facility (500+ population served, including staff and residents) with nutritional standards, of which one year must have included fiscal record keeping and participation in budget preparation.
