Regional Food Supervisor
Regional Food Supervisor (RFS) serves as a link between R&D and the restaurants to ensure the proper training of Kitchen Managers (KMs) and Assistant Kitchen Managers (AKMs) in quality food preparation which will result in guest count growth for the company.
Job Responsibilities
Quality Control
? Ensures food quality, freshness and presentation meet or exceed company standards at all times.
? Ensures that food temperatures are properly maintained.
? Ensures that all kitchen procedures are in compliance with government and company policies and standards. This includes HACCP, health, sanitation, safety, security, labor, food cost and recipe standards, guidelines, specifications and procedures.
? Performs line check with KM and manager on duty on each unit visit and takes appropriate action to resolve any quality deficiencies.
? Monitors the products received and informs QA of any quality problems. Arranges schedule to be able to visit and conduct a RFS Report at each unit monthly with follow-up as needed.
? Conducts routine HACCP audits of each unit at least once every six months. Conducts effective training and implementation of new products according to specifications.
? Assists marketing with photo shoots and commercials.
New Product/Menu Implementation
? Conducts cascade training of food related products for Regional Directors, KMs, AKMs and Unit Managers and follows up to ensure proper unit execution of products.
? Tracks and follows-up on test products with participating KMs and managers.
? Conducts refresher training for current employees.
? Provides feedback to the R&D Department following menu and specials introductions.
? Responsible for making sure that all KMs and AKMs are properly trained.
? Ensures KMs and AKMs are trained to follow through with cascade training for Cooks.
? Undertakes the development of chef specials, FSI items and menus as assigned.
Human Resources
? In conjunction with the Regional Director, hires/transfers/promotes Assistant Kitchen Managers, Chefs and Kitchen Managers. The goal is to provide the best fit between both the needs of the unit and the individual.
? Coordinates succession planning for the BOH, ensuring that high potential employees are identified; works with KM and GM to ensure these employees receive the development and training necessary to advance their careers.
? Actively participates in the recruitment and selection of AKM and KM candidates.
? Provides performance feedback to R&D, RD and GM for KMs and AKMs.
? Provides performance feedback for Managers in Training after their kitchen training to the Regional Training Managers and KMs.
? Participates in the performance management of KMs, AKMs, and Lead hourlies, assisting with coaching, performance improvement plans and documentation as needed.
? Conducts meetings and seminars for KMs, AKMs and management.
? Conducts company certification programs and ensures all KMs are certified.
? Ensures that the Regional Director is kept informed of all operational issues, including those that may be beyond the scope of their job responsibilities.
Administration
? Administers Unit Test Programs initiated by R&D. Forward feedback in writing to R&D every week.
? Completes the kitchen succession plan on a monthly basis.
? Assists the KMs in understanding financial reports and in applying basic controls that will enable them to meet food and labor cost goals.
? Follows-up and provides feedback to R&D following new menu and specials rollouts.
? Follows-up and provides feedback to R&D on new openings/conversions every other week utilizing RFS Report for a maximum of two months.
? Participates in the development of training materials as needed.
