Supervise the overall kitchen sanitation process and procedures, including, but not limited to, quality and consistent production of all china, glassware, and silverware operations. Supervise the overall standard operations of servicing the food and beverage outlets, including banquets.

Coordinate and direct all work assignments, hands on, in the Stewarding Department and ensure that organization, sanitation and cost of operation is consistent with the overall food and beverage goals and objectives.  Responsible for the supervision, scheduling and training of all employees when necessary.  Ensure ware washers are consistent in total dish washing operations by meeting departmental standards.  Coordinate with banquet runners to ensure that all set up sheets are completed and delivered in a timely manner.  Ensure that employees have all the necessary tools to complete work assignments.
Monitor and coordinate the day to day set ups of china, glassware, and silverware items to all banquet functions and outlets and ensure they are properly completed and delivered.
Responsible for chemical supply control and inventory, and for china, glassware, and silverware items breakage and loss awareness and control.  Responsible for all the proper storage of china, glassware, and silverware and their storeroom organization. 
Ensure safety is being met as a departmental goal.
Assist the Food & Beverage staff during special requests offered by any Food & Beverage manager.
Additional duties as necessary and assigned.


 

Must be able to speak, read, write and understand the primary language(s) used in the workplace.Must be able to read and write to facilitate the communication process. Requires good communication skills, both verbal and written. Must possess basic computational ability. Must possess basic computer skills.Knowledge of chemicals, sanitation and ware washing techniques and procedures.Strong motivational skills.High School or equivalent education required.  Kitchen or food & beverage related experience preferred.
